Elmo #2

Today is Eva's birthday party. For those of you with amazing memories, yes - her day of birth is actually early July. But between vacations and entertaining, this is the first available date that we could get my in-laws over to celebrate! It's not a big deal really - just a day full of swimming and Eva's favorite foods. And presents and an Elmo cake of course. Here's the lovable guy himself:

What's on the menu for a picky 2 year old you ask? City chicken, macaroni and cheese, broccoli (amazingly she actually likes this), and fruit salad. Here's the city chicken, a specialty of the Binghamton area (where I grew up). If you've never had it, you have no idea what you are missing!!!!

I can't leave without posting a recipe, can I??

City Chicken

lots of boneless chicken, cut into strips

Italian dressing

2 eggs

Italian bread crumbs

canola or olive oil

Marinate the chicken in Italian dressing overnight. Dip chicken in egg, then coat in bread crumbs. Fry in (a little bit) of hot oil on both sides until golden brown and chicken is cooked through. Eat right away!! (If you want to make this ahead of time, place chicken on a broiler pan. When ready to eat, reheat in a 300-325 oven for 30 minutes or until hot)
